Sugarcane - sweetened  Unniappam

Description  A specially flavoured version of the Kerala unniappam,this traditional, easy-to-make dish is a favourite with Malayalees.This sweet delicacy is prepared out of rice,sugar,ghee and sugarcane juice.Try out this mouth-watering recipe....
Cuisine Style   Kerala Servings  About 20 numbers
Ingredients
1. Raw rice - 2 cups
2.  Beaten rice flakes - 1/4 cup
3. Sugarcane juice - 1 cup

Sugar - 1/2cup
5.
Cardamom powder - 1 teaspoon
6.
Cashewnut bits - 10 – 12 nos
7.
  Coconut bits - 1 tablespoon
8.
Baking soda - a pinch
9.
Ghee - 1  teaspoon
10.
Refined oil - for frying

Preparation Method
 
  1.  Soak rice on the previous night.In the morning,remove excess water and grind to a paste.
  2.  Crush beaten rice flakes into a powder and add to the paste.Add sugar and cardamom powder to the sugarcane juice  and pour the juice into the paste.Add the cashew and coconut bits to the paste and set aside for half an hour.
  3.  Now add ghee and  baking soda and mix  the dough thoroughly,adding water,if necessary.
  4.  Heat oil in the "kara"and pour the dough in each of the troughs.Cook the appams on both sides  before removing from the "kara ".             Your special unniappam sweetened with sugarcane is now ready. Invite your friends for Vishu and serve them this delicious treat.
